White Bean, Tomato, & Spinach Skillet Meal

Heidi says: Our friends served this the first time they invited us for dinner. It became a frequent meal in our home, and we have served it to guests as well.

Ingredients:
  • 28 oz can crushed tomatoes with basil, chopped up into small cubes
  • 2 cans cannellini beans
  • 1 small yellow onion, finely diced
  • 2-3 cloves garlic, minced
  • small pinch of ground Rosemary
  • 2 t Italian seasoning
  • 1 cube vegetable bouillon
  • 1 small bag prewashed baby spinach
  • ~1 cup Cheddar cheese, grated
Directions:
Heat a couple of tablespoons of olive oil and pinch of salt on low heat in oven safe cast iron or stainless steel skillet. Saute onions for 5-10 minutes, until translucent, then add all other ingredients except for cheese and spinach.
Let this mixture simmer for 5 minutes. Add entire bag of spinach and simmer for another 5 minutes or until spinach turns bright green and is wilted, but not overcooked.
Top with cheese, then place the pan in the oven and broil for 3-5 minutes.
